TODD EAMES OF MAMA LION
A stunning Koreatown supperclub that serves schnitzel and smothered tater tots definitely deserves a standout sipper. For the supersexy Golden Tonic, bar manager Todd Eames and cocktail vet and General Manager Aidan Demarest made the perfect ode to SoCal with gin, carrot juice, housemade turmeric and ginger syrups, topped off with a spritz of soda. 213.377.5277
CLARE WARD OF AR CUCINA
For both of Akasha Richmond’s restaurants, Clare Ward works closely with the kitchen to create seasonal tinctures and syrups for her inspired cocktails. When Richmond turned toward Italy, so did Ward, who looks to Italian spirits, fortified wines and herbs for her innovative drinks. She comes up with things like the Tuscan Sunrise, made with rye, a touch of orange and almond, and a red-wine float for extra visual vavoom. Culver City, 310.558.8800
DEVON ESPINOSA OF WOODLEY
The cocktail program is serious for this new Valley spot, full of classics but with delightful twists to keep the drinks interesting. For the signature cocktail, barman Devon Espinosa starts with a traditional Old-Fashioned, but adds hints of allspice and cinnamon, plus orange and lemon peel to brighten it up. It’s new but timeless and unfussy, just like the Proper’s fare and casually chic space. Encino, 818.906.9775
