The past decade has seen a lamented closure of a handful of Jewish delis, once communal hubs in the city. Which is why it’s so important that young chefs like Johnson are breathing life into the tradition. The chef, who’s cooked in top kitchens like Noma, uses Jewish cooking as inspiration for her menu.
