From Aspen to Los Angeles, Catch Steak (catchrestaurants.com) has excelled in offering elevated dining experiences centered on the absolute best beef. Here, corporate executive chef Michael Vignola gives us a closer look at the restaurant’s thoughtfully curated menu—and explains how a beef sommelier can turn an ordinary meal into an extraordinary one.
What inspired you to build your beef program?
At Catch, we wanted to develop a steak program that was elevated but approachable. By sourcing bespoke, hand-cut, Prime, Dry- Aged and Japanese wagyu beef, we [offer] the best of the best and forget the rest by exclusively featuring center cuts known for their tenderness and elevated flavor. Our beef sommelier makes this experience approachable, helping curate the perfect experience for each individual guest.

What exactly is a beef sommelier?
It’s a sommelier—but for wagyu, not wine. The beef sommelier is a wagyu expert that navigates guests through our Flight of 5, a Japanese wagyu tasting experience we source and serve from 27 different prefectures throughout Japan. As a knowledgeable pro, the beef somm. can take guests on an informative culinary journey that explains the origin and flavor of each strip, similar to the way a wine sommelier would explain every pour. [It ultimately makes] for a more interactive guest experience.
What are some of the different types of steak on the menu?
We source our selections of Prime, Dry-Aged and American wagyu from a curated collective of artisanal farms across the United States. This [allows us] to feature smaller ranches with more sustainable methods and provide guests with an overall elevated product.

Can you share a bit about your wagyu offerings?
Our Japanese wagyu is cooked tableside by the ounce and includes limited allocations of Snow, Olive, Omi, Sendai and True A5 Kobe. Catch Steak is one of only a handful of restaurants with an official Kobe license, allowing us to serve certain types of meats that other restaurants cannot. The steak program was developed to show respect for that.
What do you hope guests will enjoy regarding their steak experience at Catch?
We hope every guest leaves having enjoyed a phenomenal meal, with seamless service and an all-around premium experience.
