On Tuesday, February 23, 2016, Chef-Owner Michael Cimarusti of Providence in Los Angeles invites Michelin-starred chef-partner Daniel Burns of Tørst & Luksus in Greenpoint, Brooklyn, NY and celebrated Peruvian chef-restaurateur Virgilio Martínez Véliz of Central Restaurante in Lima, Peru, for a one-night-only guest chef dinner in continued celebration of the restaurant’s landmark 10th anniversary. Luksus earned a Michelin-star this year, and Burns has previous experience in the pastry programs at both Noma (Copenhagen) and The Fat Duck and St. John (London, U.K.), in addition to setting up the test kitchen and heading up R+D for the Momofuku empire; whilst Martínez—considered to be one of Peru’s most prolific chefs in promoting the spread of his country’s cuisine at his flagship restaurant—is known for representing Peru’s best-known flavors and impressing upon patrons the complex nuances of Peruvian gastronomy.
Additionally, the following month—on Tuesday, March 29, 2016, Cimarusti will close out the anniversary series with world-renowned chefs Enrique Olvera (Executive Chef of Cosme in New York, a 2015 James Beard Award nominee for Best New Restaurant and Pujol in Mexico City) and Matthew Orlando (protégé of René Redzepi, who opened Amass in Copenhagen in 2013). Similar to earlier editions, all three chefs—Cimarusti, Olvera, and Orlando—will cook alongside one another in the Providence kitchen, exploring and reflecting on each unique culinary purview to deliver a multi-course tasting menu with a single seating for that one evening, celebrating contemporary Mexican, esoteric Nordic flavors, and Cimarusti’s sustainably-driven artful seafood fare.
