Set to open in December, modern Japanese restaurant Niku X will elevate downtown Los Angeles’ already exciting dining scene.
The newest dining concept by Chubby Cattle International expands the hospitality group’s portfolio of tech-forward, high-energy restaurants, such as The X Pot in Las Vegas’ The Palazzo.
“We are excited to announce the opening of our newest restaurant Niku X in the vibrant downtown Los Angeles,” said David Zhao, co-founder of the Chubby Cattle International Group. “Through our curated menus and an immersive fine dining experience, our mission is to alter and elevate the perception of the classic Yakiniku, and bridge the gap between Japanese and American cultures.”
Taking over the second floor of the sky-high Wilshire Grand Center, Niku X will offer sweeping city views and Japanese cuisine with global influences. The 9,000-square-foot space is characterized by a contemporary design with tile mosaics and modern Robatayaki grills, furthering its celebration of state-of-the-art design, technology and innovation.
Helmed by executive chef Shin Thompson— whose credits include concepts Bonsoirée and Furious Spoon Ramen— Niku X incorporates the Yakiniku cooking style. This traditional Japanese technique for grilling meats is key to the restaurant’s high-quality presentation of ranch-to-table ingredients, in addition to artisanal produce.
The seasonal tasting menus will feature items like seafood bites, a caviar course and a variety of wagyu cuts, among others.

“Our menu curation is meant to transport guests one course at a time. Our certified Japanese A5 wagyu is sustainably sourced from our privately-owned farm. We are proudly transparent and conscious in our extensive process and preparation of Yakiniku. Part of our story is showcasing Niku X’s specialty cuts that combine traditional flavors with a modern and multicultural spin,” says Thompson.
To pair with the food, the seasonal cocktail program focuses on Asian-inspired ingredients and the wine collection is described as “ranging from old to new world.”
Niku X will make its grand opening in early 2023, which will mark the launch of an a la carte menu with the cocktail and wine program. Beginning Dec. 15, it will open to a limited number of reservations for their Seasonal Yakiniku Tasting Menu (food only) starting at $220 per person.
Since its 2015 inception, Chubby Cattle International Group has racked up eight restaurants, including Niku X, which joins The X Pot in both Las Vegas and Chicago; Wagyu House by The X Pot in Rowland Heights; Chubby Cattle in Philadelphia, Denver and Las Vegas and Xtra Sweet in Las Vegas. It plans to widen its industry footprint with 30 restaurants total in 2023.
