For 60 days, Sushi by Scratch Restaurants will make its way through the canyon for a pop-up at the Beverly Wilshire, A Four Seasons Hotel.
Priced at $165 per person, just 12 seats are available at each dinner, which will take place seven nights a week at 5, 7:15 and 9:30 p.m. from Aug. 4 to Oct. 4.
Sushi by Scratch Restaurants presents an immersive 17-course tasting menu in a lively, but intimate speakeasy-style setting. Alongside its Encino establishment, it has locations in Miami, Austin, Seattle, Chicago and Montreal and the Michelin-starred Montecito outpost.
The forthcoming pop-up follows Sushi by Scratch’s recent successful activations at Coachella and Stagecoach music festivals.
“We pride ourselves on providing a fully immersive, deeply personalized experience at our restaurants, and we look forward to bringing that to the Beverly Hills community with our pop up at the Four Seasons,” shared husband-and-wife chef team Phillip Frankland Lee and Margarita Kallas-Lee “We love the idea of bringing the two beloved luxury brands together to create a memorable, shareable, one-of-a-kind culinary experience, and that new audiences from around the world will be able to enjoy our California take on omakase.”
Offering sweeping views of Beverly Hills alongside the feast, the pop-up will take over the Beverly Wilshire’s Royal Suite on the eighth floor. Guests will enter the dimly lit dining room to a welcome cocktail, followed by the nigiri tasting menu that mainly features fish and shellfish flown in twice a week from Tokyo’s Toyosu Fish Market.
Alongside dishes made special for the pop-up, the menu will include a selection of chef Lee’s signature pieces, such as hamachi painted yellow with sweet corn pudding and topped with breadcrumbs made from Kallas-Lee’s sourdough; aged bluefin tuna served with homemade soy sauce and fresh wasabi; albacore wrapped in sake-soaked nori and topped with ponzu, fresh wasabi and crispy onions and unagi that’s fried crispy in bone marrow fat dressed with poblano yuzu kosho, soy sauce, ponzu, lemon and sea salt. Dessert will follow with Kallas-Lee’s matcha bon bon and shortbread paired with a hot green tea that is brewed with umeshu plum wine, smoked lavender honey, and fresh yuzu.
To complement, diners can opt for various beverage pairings such as six pours of Japanese whisky or three sakes, two micro cocktails and a beer. The beverage program was developed by Gavin Humes, sake sommelier and director of operations.
